Taking Sides - - -




Ginger and Lemon Coleslaw

One cup Green Cabbage shredded
Half Cup Red Cabbage shredded
Three Fourth cup Baby Carrots sliced
One and a half tablespoon  Lemon juice
One teaspoon  sugar
One teaspoon  vegetable oil
Three fourth tablespoon grated fresh Ginger
One eighth teaspoon  salt
One eighth teaspoon  crushed Pepper
* One tablespoon  Chopped Cilantro
* Lemon Slices to Garnish


Combine all of the ingredients except Cilantro and Lemon slices in a medium bowl.  
Mix and Toss.  Serve after fifteen minutes. Top with Cilantro only before serving. 
Garnish with Lemon slices if serving in a platter. you can save the Lemon slices for future use in tea or something else if people don't use them.
Makes four half cup servings.

My husband said that I don't know how to make the sides that come with the fried chicken. I told him that I am working on it but Coleslaw is not a problem. He wondered if I had the ingredients for Coleslaw. I told him that I have the ingredients and then some. He said that no one can make like the one that comes with the Fried chicken, but he was willing to try my weird method. Vegetable oil being the only fat, versus cream and other fats in the other Coleslaw did not sound like Coleslaw to him. When he saw me chopping the green cabbage very fine, he asked me if I can chop the purple one ( meaning the Red Cabbage) a little thicker because it is hard to pick up very finely chopped Coleslaw with the fork. 
He actually liked it.

  2. This sounds delicious, it reminds me of when we used to make coleslaw at my first job, I worked in a drive in restaurant when I was 12 and 13 and made our dressing very similar. I recall the lemon juice, sugar and oil, no ginger or other spices though if I remember right. It was simple and people loved it along with their chicken.

How you mentioned about the lemon slice garnishes--that they could be saved to be used in tea later. Waste not, want not. :-) Very nice.

  20. I love cabbage! Especially purple cabbage. If I cut up a plate of raw purple cabbage, my family will eat an entire head of it without even thinking about it. (We are an odd crew.) I love coleslaw, too, but can't do mayonnaise, so I've learned to do it the other way. Your way. Which works! Love all those ingredients.

  26. This looks like a yummy recipe. I seldom have a ginger root in the kitchen so I'm wondering if the bottled kind would be okay to substitute? We're used to the creamy dressing made with mayo. But hubby had a heart attack almost 2 years ago and he needs to eat healthier.

  34. When I was growing up in Tucson pre-air conditioning (evaporated cooler only) we never used mayonnaise. Mustard only on our sandwiches. Beside just healthy eating the heat made anything with mayonnaise suspect.
    Our coleslaw was always made with oil and spices. So good and rather refreshing. One of the first times I had a mayonnaise based coleslaw I was shocked when it was drowning in mayo and that is all you really tasted.
    I make a great Japanese potato salad that the creaminess comes from mashing up(leaving chunky) the potatoes and adding just a small amount of Japanese Mayo.

  41. Coleslaw is very healthy for you.
    In my family there was cabbage soup on the stove every day and people lived long lives.
    I like to buy the ready chopped packages and use them for cabbage soup.
    Saves me the trouble of chopping lol

  45. How could you possibly KNOW how much i enjoy coleslaw??? I'll give this recipe a try. I have had plenty of variations . . and now i wish I'd kept track of how many ways people have thought to do this dish. Chicken or not - i would appreciate plenty of your "side dish."

  66. I actually like homemade coleslaw better than the one that comes with the commercial fried chicken meals. It's not as sweet, which is my preference. I think I'll try your recipe.

  81. I am a *big* fan of cabbage. In the summer, red cabbage thinly sliced with equally thinly sliced apples, sunflower seeds, dried currants and olive oil and balsamic vinegar is just lovely (sea salt and pepper to taste.) In winter seasoned ground beef and cooked cabbage is super satisfying.

  93. Ew! I *don't* like how the coleslaw tastes like that comes with the chicken, nor the parfaits and potato salad as well as the crab! Those are super nasteeeeeeee! I can taste the preservatives and processed stuff in them. xP

Sounds good Munir, when I worked in a place in my early teens we never used the mayonnaise in our coleslaw, it was lemon juice, oil, sugar, white pepper and hmmm I'm not too sure if that was all we used, I'm talking about 38 years ago so the mind is a wee bit rusty lol Everyone loved our coleslaw though, even I liked it and I was barely a teenager and never used to eat "stuff" like this!

    If your husband is talking about KFC fried chicken, there is a recipe for their coleslaw online. It's not hard to find. Let me know if you can't find it. I copied it.
